EXECUTIVE CHEF

Landmark Resort is looking for a talented, passionate and creative Executive Chef.

If you are a talented, passionate and creative Executive Chef with leadership skills as strong as your ability to dream up a delicious menu, then this is the position for you! If you have the ability to innovate, identify and solve problems, and make the kitchen a positive and highly functioning place, then this is the resort you need to be at.


Responsibilities and essential job functions include but are not limited to the following:

You will oversee expertly crafting a menu, fitting with the concept and locale while partnering with the General Manager to create the right feel within the resort’s décor.
You love to help develop future chef’s, so you’ll share inspiration and ideas with kitchen staff daily to motivate, teach and maintain a positive culture behind the line.
While managing labor costs, you’ll lead the charge for training kitchen staff, menu creation and ensuring appropriate production of all menu items, ensuring an efficiently operating kitchen that meetings our quality standards.
All strong leaders uphold all standards of conduct per our employee handbook in the kitchen, documenting and training staff accordingly.
You are a pro at cost-control and will consistently review portions and quantities of preparation, ensuring the highest quality and minimal waste while maintaining your kitchen budget.
You’ll oversee all kitchen staff in maintaining a sparkling environment; adhering to all DHEC regulations for cleanliness and sanitation and reporting any accidents right away.
Daily, you’ll oversee kitchen production to ensure proper plate presentation, use of garnishments, and both taste and quality of dishes is up to par.
You’ll maintain time and payroll records, submitting payroll for your staff on a weekly basis.
Occasionally, you may have to fill in to keep the kitchen running; you are both able and willing to perform all responsibilities of each position in the kitchen when needed.
As your menu will be ever-evolving, you’ll need to build and maintain close relationships with local vendors, farms, etc.
Ensure that the guest experience is the number one goal, at the end of all we do.
Requirements:
Required Knowledge, Skills & Abilities

Proven working experience
3+ years of proven, successful culinary experience in a high-volume environment.
2+ years of Food & Beverage Management experience.
A positive, friendly and enthusiastic team player with excellent record of kitchen management.
Strong problem management skills with accuracy in quickly handling emergency situations and providing solutions.
Excellent leadership skills with the ability to communicate, mentor, develop, coach, counsel, delegate and supervise multiple levels of kitchen staff.
Understanding and knowledge of safety, sanitation and food handling procedures.
Must be available to work nights, weekends and holidays.
Must be able to exercise good judgment and decision-making abilities.


PERFORMANCE STANDARDS

CUSTOMER SERVICE: Maintain customer satisfaction as the driving philosophy of the Food and Beverage department. Personally demonstrate a commitment to customer service by inquiring about service quality and responding promptly to guest needs. Promptly handle guest complaints. Fill in for staff when necessary to ensure customer satisfaction. Ensure your staff, including all new hires, is trained to meet standards. Empower staff to deliver customer service by encouraging and rewarding responsive guest assistance. Level of service provided to guests in all outlets meets or exceeds customer expectations. Ensure that consistency of service and standards are met.

FINANCIAL: Manage department within budget. Accurately forecast revenues/expenses. Assist in preparing annual departmental budget that accurately reflects the department’s operations plan. Anticipate revenue/cost problems and report discrepancies to F&B Director. Assist hotel staff with accounting related issues. Analyze financial and operating information on an ongoing basis in order to adjust labor, supplies, materials and other costs to achieve budget. Ensure department staff is trained in control procedures as outlined by Internal Audit, and that these procedures are consistently followed.

PEOPLE: Manage people according to Vacation Myrtle Beach values. Manage human resources functions including recruiting, selection, orientation, training, performance reviews, and pay and recognition programs to maintain a skilled and motivated workforce. Maintain a positive, cooperative work environment between staff and management. Emphasize training and development as a way of doing business in order to empower employees to successfully perform their jobs. Help to develop management talent by acting as a mentor for direct reports. Resolve employee grievances fairly and timely. Ensure employees fully understand performance standards, review process, and reward successes. Manage safety program to protect guests and employees and which meets OSHA requirements. Use ongoing safety plan to minimize workers’ compensation claims. Train staff to increase level of customer sales, service and safety skills on an ongoing basis. Ensure employees are appropriately certified for their job as required by federal, state or local regulations. Monitor and maintain acceptable turnover levels.

QUALITY: Know the general operations of department and how all Resort’s departments work together to achieve business objectives and to meet customer expectations. Know the commonly occurring challenges of the F&B business and how to overcome them. Know banquet standards and hold employees accountable for consistently meeting these standards. Maintain favorable health department scores. Manage a preventive maintenance program for all equipment. Control food-borne illnesses. Meet safety and sanitation standards such as Emergency Plan, CPR/Heimlich training for all employees, proper storage of foods, storing chemicals away from food, etc.

MANAGING THE BUSINESS: Assist in the preparation of the banquet budget and maximize department resources to contribute to the successful achievement of the budget. Identify major revenue and expense opportunities and possible problems. Identify and select vendors that provide quality service and competitive prices and monitor to ensure quality of goods and service is met. Adjust inventory, department labor schedules, staff assignment and supplies based upon demand without loss in quality service. Keep repair costs down by maintaining equipment. Work with local vendors to keep costs down.

HOUSEKEEPING SUPERVISORS

The Landmark Resort is seeking an experienced Housekeeping Supervisor.

This is a regular full time, mid-management positions requiring someone with resort experience, supervising room attendants and completing room inspections.
Must be available to work weekends and holidays

ROOM ATTENDANTS

The Landmark Resort is seeking Room Attendants for our Housekeeping Department.

This position is responsible for cleaning privately owned condominiums at the resort.

Applicants must be available to work 1st Shift, six days per week and working weekends and holidays is required.
